APPETIZERS

GUACAMOLE: Fresh guacamole "an El Coyote Favorite" made at your table. Served with warm corn tortillas.
SOMBREROS RELLENOS: Stuffed green banana plantains with beef, chicken. or with sofrito shrimp.
BOCADILLOS: Mix Sampler platter of nachos, chicken wins, flutes and empanadas.
ALITAS DE POLLO: Tasty chicken wings served with a mild sauce.
NACHOS: Crispy flat tortilla topped with refried beans, cheese and your choice of chicken or ground beef.
QUESADILLAS: Flour tortilla stuffed with pico de gallo and melted cheese. (with grilled steak or chicken)
CAMARON DE COCO: Shrimp, pan fried in at very light vegetable oil, covered with coconut flakes and served with mild mango sauce.
CAMARON AL AJILLO: Fresh shrimps sautéed in fresh roasted garlic with Chilean sauvignon blanc.
CAMARON VERACRUZ: Fresh shrimps sautéed in a light tomato sauce, with chopped onions, tomatoes, cilantro and sauce tequila.
TAMAL MEXICANO: Corn meal stuffed with marinated chicken steamed in corn husks.
FLAUTAS: Deep fried rolled up corn tortillas, stuffed with your choice of pork sausage chicken. (grilled steak)
EMPANADAS: Fried pastry turover filled with chicken or beef.

SOPA DE CAMARON: Mild light tomato broth w/shrimp, potatoes and carrots.
SOPA DE MARISCOS: Hearty seafood broth with scallops, shrimp, mussels and clams.
CREMA DE MARISCOS: Creamy lobster and vegetables base with shrimp, squids, mussels and clams.
SOPA DE POLLO: Homemade chicken broth with veggies and chunky white meat.
SOPA DE FRIJOL: Black bean soup.
SOPA DE TORTILLA: Mexican dry peppers broth with tortilla, chicken, avocado, cilantro and cheese.

 
SALADS

ENSALADA DE CAMARON: Grilled shrimp over lettuce, tomatoes, red onions, red and green bell peppers.
ENSALADA DE AGUACATE: Chunks of avocado seasoned with our house ginger citrus dressing over field greens.
ENSALADA COYOTE: Romaine lettuce, tomatoes, red onions, green and red peppers, tender cactus and avocado.
ENSALADA TROPICAL: Marinated breast of chicken, pineapples, bananas, cantaloupes and mango with guava mojo over green field.
TACO SALAD: Romaine lettuce, whole red beans, sour cream and guacamole served in a taco shell, choice of grilled steak or chicken.
ENSALADA DE POLLO: Grilled chicken breast over lettuce, tomatoes, red and green bell peppers, red onions and red cabbage.

POLLO AL AJILLO: Marinated boneless chicken breast sautéed with fresh garlic and Chilean sauvignon blanc.
POLLO EN SALSA VERDE: Boneless chicken breast sautéed in a special Mexican green tomatillo sauce.
